Strawberries are a good source of vitamin C, which helps in building immunity. Perfect for fighting those school sniffles! And here’s a fun fact for you! Strawberries are also a good natural tooth cleaner. Say cheese!

And if you’re looking at new ways to pack in those veggies, the beetroot ingredient in the brownie recipe will go down a treat.

How to make strawberry & beetroot brownies

  • Pre heat the oven to 160 Fan.
  • Put the chocolate and butter into a bowl. Melt over a pan of boiling water.
  • Add the vanilla, eggs and sugar and mix well. Add the cocoa powder, flour and beetroot.
  • Mix until well blended and spoon into 24-hole silicone mini muffin tray. Bake in the oven for 20 minutes until firm and well risen. Leave to cool, then remove from the tray.
  • Peel the kiwis and remove the tops. Slice each kiwi into three rounds. Trim the stalks from the strawberries.
  • Thread a lolly stick through one strawberry, kiwi round and brownie. Lay the rockets on a plate.
  • Put the chocolate for decorating the rockets into a bowl and melt over a pan of boiling water. Spoon the melted chocolate into a small piping bag. Pipe a zig zag over each rocket.
  • Chill until set and then you can stand them up for extra taste appeal!

    • 100g plain chocolate
    • 50g butter
    • 1 teaspoon vanilla extract
    • 2 eggs
    • 100g light brown sugar
    • 10g cocoa powder
    • 75g self-raising flour
    • 100g beetroot, grated

    • 24 BerryWorld strawberries
    • 50g plain chocolate, melted
    • 24 lolly sticks
