All the spices and flavourings of a classic simnel cake with added juicy berries.

Preheat the oven to 180C/160C fan/gas 4. Line a 20 x 30cm shallow baking tin with parchment paper.

Place the butter and sugar in a large bowl and whisk with an electric whisk until pale and fluffy. Add the eggs one at a time, mix well between each addition.

Sift the flour into the bowl along with the ground almonds and spices. Add half the marzipan chunks and give everything a good stir to combine.

Tip the mixture into the prepared tin and level the surface and sprinkle over the fresh berries and remaining marzipan pressing them gently into the batter mix. Bake for 30 – 40 minutes until a skewer comes out clean when inserted into the centre. Leave to cool in the tin for 10 minutes then remove and cut into squares. Serve warm or cold with extra cream.
