As pretty as a picture and delicious to boot, strawberries are a fresh take on an all-time favourite which requires only chilling time.

  • Add gelatine to hot water, stand for 5 minutes until dissolved. Set aside.
  • Beat egg whites until soft peaks form, then gradually add sugar, beating until dissolved.
  • In a separate bowl, whip cream until soft peaks form.
  • Fold in egg white mixture.
  • Add strawberries, lemon juice and gelatine and fold in lightly.
  • Pour into serving glasses and refrigerate until set.

  • 1/2 cup caster sugar
  • 1 1/2 cups cream
  • 1 tbsp lemon juice
