Believe us the pairing of brie and blueberries is absolutely sublime. A splash of balsamic vinegar for syrupy sharpness is the only extra ingredient you need.

Spread each slice of bread with the butter, these will be the outside of the toastie. With the bread butter side down layer up the unbuttered side with slices of the Brie. Top this with the blueberries, pressing them into the cheese to hold them in position. Drizzle over the balsamic and then top with the remaining slices of bread (butter on the outside) and press down .

Heat a frying pan on a medium heat and add the olive oil. Add the sandwiches to the frying pan. Depending on the size of your frying pan you may need to do this one at a time. Place a sheet or parchment paper over the top then top with another frying pan or heavy baking tray and fry for 3 minutes, pressing down gently.

Carefully turn the sandwiches and fry on the other side for 3 minutes. Remove from the pan, cool for a minute then halve and serve.
