Father Christmas pancakes with festive strawberry tree

Pancakes

  • Whisk flour, sugar, baking powder and salt in a bowl.
  • Whisk egg, milk and melted butter in a jug. Pour into the dry ingredients and mix to a thick batter.
  • Heat a lightly buttered non stick pan over medium heat.
  • Cook small pancakes using two tablespoons of batter each. Flip when bubbles appear and cook until golden. Keep warm.
  • Arrange pancakes into a face on a plate. Use whole blueberries for eyes and raspberries for the hat trim and strawberries for the hat. Serve with cream, maple syrup and extra berries.

Festive strawberry tree

  • Wrap the craft cone completely in plastic wrap so the fruit does not touch the cone.
  • Starting at the base, push toothpicks into the cone so a little sticks out. Press a strawberry onto each toothpick. Work in neat rings up the cone, keeping gaps tight.
  • Tuck mint leaves between strawberries to mimic foliage and cover any small spaces.
  • Just before serving sift a light snowfall of icing sugar over the tree.
  • Set the strawberry tree next to the pancake plate as an edible centrepiece.
